Waste is an inevitable part of making food but that waste doesn't have to be thrown away. One of our homemade cultures is rejuvelac which requires us to ferment quinoa. At the end of this cultiring process, we're left with stacks of fermented quinoa.
To help prevent further waste, we teamed up with Andres Jara, a local chef famed for his pop up restaurants and spicy hot sauces. Andres worked his magic once again creating a delicious mustard. With the texture of a wholegrain and flavour of Djorn, this is a mustard lover's dream.
Ingredients: fermented quinoa, white wine vinegar, mustard, white wine, salt, turmeric, sugar.
